Happy Friday! Is anyone else jumping for joy knowing that we’re headed into a LONG WEEKEND?! I am so excited! We’re headed home to get away for a bit and celebrate our anniversary and Stephen’s birthday with my family and all of our four-legged fury friends. It’s going to be so nice to just unwind a bit with them and Adi is going to be in heaven with the goats all weekend…
This week on the menu I tried to incorporate recipes that would use up a lot of leftovers and ingredients on hand. Remember, USE WHAT YOU ALREADY HAVE! With the pesto pizza rolls for example, if you already have some crescent rolls on hand and don’t feel like making the dough, use them up! Do your best to limit the amount you spend on groceries for the week. We’re going to be getting a rotisserie chicken from Sam’s Club using a coupon that we have so a lot of the recipes are utilizing that. If you don’t want to spend the money and have chicken on hand, throw that on the grill and use that for the week! Whatever works best for you.

Monday: MEMORIAL DAY! If you need to make something for a BBQ, the Super Fresh Cucumber Salad looks deeeelicious!
Tuesday: Memorial Day leftovers OR Rotisserie Chicken (we had a coupon from Sam’s!) OR leftover grilled chicken from a BBQ or grill some chicken! + Grilled Vegetable Pasta Salad
Wednesday: Greek Chicken Wraps (use the leftovers from the rotisserie to make these! We also had pre-made tzatziki sauce from Sam’s so they were super quick and yummy) + Leftover Cucumber Salad or Pasta Salad
Friday: Pesto Pizza Rolls (if you want to make this super easy just pick up some premade dough)
Saturday: Leftovers/Out

4 – Roma Tomatoes
2 – Small Red Onion
1 – green Bell Pepper
1 bunch – Parsley
1 – Zucchini
1 – Yellow Squash
1 – Red Bell Pepper
2 pint – Grape Tomatoes
1 clove – Garlic
1 – Cucumber
1 head – Romaine Lettuce (or another kind such as head lettuce if you’re still justifiably worried about E. coli…)

1 C – Red Seedless Grapes
Fruits for lunches/snacks. We picked up big packages of strawberries that were on sale at Sam’s! I believe Kroger also has strawberries on sale this weekend too.
