This recipe is a favorite of ours! We make it at least once every two weeks. It’s delicious and super easy to throw together with minimal dishes and utensils to wash. We eat it as a side or we add a couple of fried eggs and make a meal out of it. We also tend to add greens such as Brussels sprouts or broccoli to not only add some more nutrients but to also get rid of them if they’re on the verge of going bad. We hope you love it as much as we do!
Preheat the oven to 415°F.
Spray the bottom of a baking sheet with nonstick spray.
Add the potatoes and bacon to the baking sheet. You can add more bacon if you wish! We usually use a minimum of 5 slices. You can also add Brussels sprouts or broccoli for some greens or to get rid of some vegetables that are about to go bad. This is an easy one to modify!
Sprinkle black pepper and rosemary over the mixture. Add salt if the bacon is low sodium or to taste.
Toss the mixture around with a spoon so that the spices and bacon are evenly dispersed and so that the potatoes have a bit of bacon fat on them. You do not need to add any extra oil!
Bake for 30-40 minutes, flipping the potatoes with a spatula around 15-20 minutes in so they are evenly cooked.
Enjoy as a side or top with a fried egg to make a meal out of it!
