This family recipe is one of my favorites for dinner. I used to make it while in graduate school and my friends all loved it (I think because it reminds them of pizza). It’s so simple to make and takes less than 30 minutes! It’s especially great for when you’re in a pinch to make dinner. You probably already have most of the ingredients on hand in the pantry. I highly suggest doubling it up! Not only is it great for dinner but it’s also great for lunch the following day. Serve this with a vegetable on the side and you’re good to go!
Ingredients you’ll need:
Chop up the onion and pepperoni.
Over medium heat, simmer onions and pepperoni together for about 5 minutes. Stir frequently.
Add the can of drained chickpeas to the pot along with oregano, paprika, garlic, and hot sauce if you wish. Stir to combine.
Pour the mixture into an oven safe dish.
Bake at 350 F for 15 minutes.
I don't ever measure out the spices. They're usually just "eyeballed". This is one of those dishes where you can throw in as much or as little as you like!
The recipe says it can make 3 servings but to be honest, Stephen and I (both really big eaters) finish this with no problem. Let me know if you try it out and what you think!
