Almond Biscotti

posted in:

For all of my fellow almond lovers out there, this cookie recipe is for you! The best almond biscotti.

A biscotti cookie dunked into a cup of coffee or tea. Mmm mm mmm. It’s one of the greatest things. Stephen’s Mom makes it every year during the holidays so we love to wake up and have a couple of biscotti in the morning with our coffee. This sweet little tradition we have is the very reason I wanted to share this tasty recipe with you all.

For a while, the thought of making biscotti intimidated me for some reason. This one, however, is so simple to make! My Aunt Donna sent me this recipe (adapted from Epicurious) and after reading the instructions I thought, “This doesn’t sound hard at all!” We were actually so surprised at how easy yet delicious it was. There are so many fantastic types of biscotti out there but this one is a great option. It’s not too sweet but has tons of delicious almond flavor. Try this recipe out, dunk it in your favorite drink, and enjoy!

Christmas Cookies - The best almond biscotti.

Almond Biscotti

Ingredients

  • 2 Cups All-Purpose Flour
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 4 Tbsp Unsalted Butter, softened
  • 1 Cup Granulated Sugar
  • 2 Eggs
  • 1/2 tsp Vanilla Extract
  • 1/4 tsp Almond Extract
  • 3/4 Cup Sliced Almonds

Instructions

  1. Preheat oven to 350 F degrees.

  2. Line a large rimmed baking sheet with parchment paper.

  3. Using a stand or hand held mixer, cream together the butter and sugar.

  4. Beat in the eggs one at a time until completely combined.

  5. Add in the vanilla and almond extracts.

  6. With the mixer on slow, add in the almond slices until dispersed.

  7. In a separate bowl, whisk together flour and baking powder.

  8. Mixing on a slow speed, add the flour mixture into the wet ingredients until just incorporated.

  9. Halve the dough and place each half on the baking sheet. Shape each half of dough into a log and then flatten the top of the log down. Smooth out the top of the logs with a little bit of water on your hands.

  10. Sprinkle a little bit of raw sugar on the tops of the dough.

  11. Bake in the oven for 30 minutes.

  12. Remove the baked loaves and let them cool for 10 minutes.

  13. Slice each loaf into the size biscotti you want. I did mine about an inch.

  14. Lay the slices flat on the same baking sheet and put back in the oven for 15-18 minutes or until the biscotti is completely baked in the middle and golden brown around the edges.

  15. Transfer the biscotti to a cooling rack and let cool completely.
