Spicy Sausage & Kale Soup


  • 3/4 cup Wild rice
  • 1 tbsp Olive oil
  • 1 lb Spicy chicken sausage, sliced
  • 16 oz Mushrooms, sliced
  • 1/2 cup Water
  • 1/4 tsp Thyme
  • 1/4 tsp Crushed red-pepper flakes (or more if you wish!)
  • 4 cup Kale, chopped
  • 8 cup Beef or chicken broth (low sodium if possible!)
  • Salt & pepper


  1. Cook rice according to instructions on package.

  2. Heat olive oil in a soup pot or Dutch oven on medium-high heat. Add sausage and cook for 7-8 minutes until brown.

  3. Add in the mushrooms and cook for 6-8 minutes until soft and brown.

  4. Add the water and scrape the bottom of the pot before adding all of the spices.

  5. Stir for 2 more minutes before adding the broth, kale, and rice. Reduce the heat and simmer for 15 minutes or until ready to serve.
