Cook rice according to instructions on package.
Heat olive oil in a soup pot or Dutch oven on medium-high heat. Add sausage and cook for 7-8 minutes until brown.
Add in the mushrooms and cook for 6-8 minutes until soft and brown.
Add the water and scrape the bottom of the pot before adding all of the spices.
Stir for 2 more minutes before adding the broth, kale, and rice. Reduce the heat and simmer for 15 minutes or until ready to serve.
